Abstract


Sweet potatoes have been cultivated by several regions in Indonesia, but people only process sweet potatoes into traditional foods and snacks such as chips. To extend the shelf life of sweet potatoes, sweet potatoes are processed into sweet potato flour. Sweet potato flour as one of the processed sweet potato products has the potential to be a raw material for the flour-based food industry. Sweet potato flour is expected to be able to replace the role of wheat flour in order to suppress wheat flour imports from abroad so that it can lift the economy of sweet potato farmers even though the price of sweet potato flour is more expensive than wheat flour. Taro Lekker Holland substituted purple sweet potato flour because he wanted to diversify local food ingredients, innovate contemporary cakes that are liked by many people. In addition, processing purple sweet potato flour into cakes can increase the selling value of sweet potatoes. The limitation of the problem in this final project is to find the right composition of ingredients by using purple sweet potato flour substitution in making Taro Lekker Holland as an alternative to contemporary cakes. The development of Taro Lekker Holland Cookies with purple sweet potato flour substitution in addition
to using purple sweet potato, is also expected to create a product with a delicious taste and texture in accordance with standard product characteristics that can be used as a snack. This research and product development (R&D) stage is carried out using development research or often referred to as Research and Development. Product development in this study uses a 4D research model, namely 4 stages of research Define, Design, Develop, and Disseminate. The substitution of 80% purple sweet potato flour is most suitable because the color produced is good, the texture of the cookies is not too dense, and the sweet potato flavor is not too prominent or lacking. After knowing the results of the sensorite test, it can be concluded that the product of Taro Lekker Holland cookies with 80% substitution of purple sweet potato flour can be accepted by the public.
